Corn and flour tortillas are two different foods — the distinction is the whole point.
A corn tortilla and a wheat flour tortilla share a name and very little else.
Corn tortillas are made from nixtamalised maize — corn treated with
lime, which releases bound niacin and improves the protein. They are naturally gluten-free,
around 50 calories each, and higher in fibre.
Flour tortillas are
refined wheat with added fat, often shortening. They are larger, softer, roughly double the
calories, and contain gluten.
If someone tells you tortillas are a healthy option, ask
which kind.
Per 100g. A corn tortilla is roughly 25g; a flour tortilla is often 45–70g.
Based on the nutrients and fibre this food supplies. These are supporting foods, not treatments.
Choose corn where you can. Fewer calories, more fibre, no gluten, and the
nixtamalisation genuinely improves the nutrition.
Warm them properly.
A dry hot pan for thirty seconds a side. Microwaved tortillas are rubbery.
Watch the size on flour tortillas. Large burrito wraps can carry more
carbohydrate than four slices of bread.
Two small corn tortillas
usually equal one flour tortilla in calories — and are more satisfying.
Nixtamalisation is the process worth knowing about. Soaking maize in an alkaline lime
solution breaks down the cell walls, releases niacin that is otherwise chemically bound and
unavailable, and improves the amino acid balance.
It is why traditional maize-based
diets in Mesoamerica did not produce pellagra, while maize-dependent populations elsewhere
that adopted the grain without the technique did. Corn tortillas carry that benefit; cornflour
products generally do not.
Coeliac disease: naturally gluten-free, but only if it has not been
made or handled alongside wheat. Check for certification if you are coeliac rather than
gluten-avoiding.
Diabetes: gluten-free does not mean low
carbohydrate. Portion still matters.
Flour tortillas contain wheat and are not gluten-free.
