Meat is where dietary advice gets loudest and least useful. The evidence is steadier than the argument suggests: the cut and the processing matter far more than the animal.
Sausage, salami, bacon, ham, hot dogs and most deli meat are preserved with salt and nitrites. These are classified separately from fresh meat by cancer research bodies, and the evidence linking them to bowel cancer and heart disease is considerably stronger than for fresh red meat.
If you change one thing, change this one. Cutting processed meat back is better supported than any argument about red versus white.
Beef, lamb, mutton, goat, pork. Rich in heme iron — the form your body absorbs most easily, which makes red meat genuinely useful for iron deficiency in a way that plants struggle to match. Higher in saturated fat, so cut choice matters.
Chicken, turkey, duck. Leaner, especially breast meat without skin. Turkey in particular is underrated outside of festive cooking — lean, cheap in most markets, and easy to work with.
Liver, kidney, heart. Extraordinarily nutrient-dense — liver is among the richest natural sources of vitamin A, B12 and iron there is.
But that density cuts both ways. Liver contains so much vitamin A that frequent large portions can push you into toxic territory, and pregnant women are advised to avoid it for exactly that reason.
