Some real evidence for cold duration — and raw berries are genuinely toxic.
Elderberry extracts have shown modest reductions in cold and flu duration in several small trials. Raw elderberries, leaves and stems contain cyanogenic glycosides and must be cooked.
Like most fruit, its practical value lies in what it
displaces rather than any single compound: whole fruit eaten instead of a sweetened snack is
the change that shows up in the numbers.
Per 100g. Exact composition varies considerably by variety, ripeness and growing conditions — check a food label or the USDA database if you need precise figures.
Based on the nutrients and fibre this food supplies. These are supporting foods, not treatments.
Ripeness decides everything. Underripe fruit is sharper and lower
in sugar; fully ripe is sweeter and softer. Neither is wrong — they suit different
uses.
Eat it whole rather than juiced. Juicing removes the fibre that
slows sugar absorption, which is the main thing separating whole fruit from a sweet
drink.
Pair it with protein or fat — yoghurt, nuts, cheese. It
flattens the glucose response and keeps you full considerably
longer.
Refrigerate once cut and eat within a couple of days.
Whole fruit delivers sugar inside a fibre matrix, which is why it behaves so
differently from juice or confectionery containing the same amount of sugar. The fibre slows
gastric emptying and physically impedes enzymes reaching the sugar.
The polyphenols
— the pigments and bitter compounds — are increasingly thought to matter as much
as the vitamins, largely through their effects on gut bacteria and on inflammation. That
research is genuinely promising and genuinely unfinished, and anyone telling you otherwise is
overselling it.
Never eat raw elderberries, leaves or stems. They contain
cyanogenic glycosides and cause nausea, vomiting and diarrhoea. Cook them
thoroughly.
On immunosuppressants: elderberry may affect immune
signalling. Ask your doctor.
Diabetes: whole fruit over juice, portion aware, and better eaten
with protein or fat than alone.
IBS: several fruits are high-FODMAP
and commonly trigger symptoms — tolerance is personal.
Kidney
disease: potassium may need limiting. Ask your doctor for your numbers.
